BEETROOT AKA BARBIE HUMMUS

This quick beetroot hummus is officially my new go-to snack. Creamy, pink and tastes just as good as it looks!


Ingredients (6-8 servings)


  • 1 can (430 g/15 oz) chickpeas, drained and rinsed

  • 2 medium cooked beetroots (approximately 200 g/7 oz)

  • 2 cloves garlic

  • Zest and juice from 1 medium lemon (about 3 tablespoons juice)

  • 3 tablespoons tahini

  • 3 tablespoons olive oil

  • ½ teaspoon salt

  • ½ teaspoon ground cumin


Instructions


Add all ingredients to a food processor and blend until smooth and creamy, about 2-3 minutes. Scrape down the sides as needed. Add water 1 tablespoon at a time until you reach your desired consistency. Taste and adjust seasoning with more salt, lemon juice, or cumin if needed.


This hummus comes together super easily and quickly by pureeing all ingredients in a food processor. That's it! Proof that pretty (and easily made) food can actually taste incredible.
